Gnocchi (pronounced [ˈɲɔkːi] in Italian; singular gnocco) is the Italian name for a variety of thick, soft noodle or dumpling.

Apparently you can buy them in the supermarket (so says wikipedia) but we had never heard of them until we came to Paraguay.
Here they are normally a potato pasta and taste super good. We had some yesterday (along with spinich ñoquis, beet ñoquis, sweet potato ñoquis) at "Il Capo" an Italian restaurant in Asuncion and they were delicious.
Unfortunately, the ones that you can buy in the supermarket in Paraguari are made from Semolina and don't taste as good as the potato ones. And to make the homemade potato ones are a lot of work.
First you make have to boil your potatoes, mash them, add flour and eggs, roll out the dough and cut the ñoquis, and then boil them. Never mind making the sauce to put on top of them.
A lot of work. But we found a shortcut. Use INSTANT mashed potatoes and save 20 minutes of work. Still a lot of work but not as much.

The secret is keep the dough soft, and put in the fridge for 15 minutes before rolling out the dough so that they are not so sticky.
*I, Travis, have never actually made ñoquis. But I really like them. Internet research is more valuable than actual real life expermenting right?

We usually put on a tomato based sauce, but anything that is good on noodles works.
